1/2 C dried apricot
1/2 C dates, medjool, chopped
1/2 C pecans
1/2 C pine nuts
4 oz cream cheese
1/2 C powered sugar
1/2 C coconut cream
1/4 C sour cream
1 T matcha
1/4 t lemon zest
fresh raspberries


Place apricots, dates, pecans and pine nuts in a food processor and pulse until a dough forms.
Roll a marble sized balls and squash into the bottoms lines placed in a mini cupcake pan.
Cream the cream cheese and powdered sugar together.
Scrape and blend in the coconut cream and sour cream.
Scrape and blend in the matcha and lemon zest.
Drop a tablespoonful of this mixture over the nut mixture and top with a raspberry.
Chill for at least 30 minutes.
