1/2 C red wine
1/4 C honey
1 T herbs de provence
1 clove garlic, minced
4 fresh figs (turkey), quartered
3 T olive oil
4 chicken thighs (skin on/bone in)
2 slices Wegman’s Rosmarino Ham
Combine wine, honey, herb, and garlic in a small saucepan and reduce by 1/3
Add figs and simmer for 2 min.
Heat olive oil in a large skillet and sear chicken for 2 min per side.
Pour fig sauce over chicken, reduce heat to medium and simmer for 10 min or until chicken reaches 160F.
Stir in ham.
Place under broiler to brown chicken skin.
Crack pepper over chicken.
Serve with rice.
