Tuna Stuffed Tomatoes
3 large tomatoes
1 T olive oil
1 T malt vinegar
1 t fish sauce
1 clove pickled garlic
2 T parsley, minced
1 T capers, minced
1/2 t old bay
3 T mayonnaise
1 T Dijon mustard
5 oz can of tuna, drained
6 T ricotta
Cut tops of tomatoes and remove pulp.
Mince pulp and combine well with remaining ingredients except ricotta & paprika.
Spoon mixture back into tomatoes.
Top with 2 T ricotta each and sprinkle with paprika.
1 large cucumber
1 small honeydew melon
1/2 C mint leaves
1/2 C lime juice
1 bottle cucumber soda
Thinly slice 1/2 of the cucumber & roughly chop the other half.
Remove the seeds from the melon, cut into wedges and remove the rind.
Place chopped cucumber, melon & mint in blender and blend until smooth.
Strain out pulp and add lime juice, cucumber soda and cucumber slices.
Fill glasses and top with lime slice.
I may or may not have added a shot of gin to my glass…
